Relax, Relax, Relax

Sometimes you just need a weekend where you get nothing productive done. This weekend was that one. The theme was relaxation and it was marvelous!
Saturday started out as a gorgeous day, perfectly sunny and no humidity. The weather was still hot so I headed to the beach. It was my first time going since my the fracture in my knee. I left my brace and crutches in the car so they wouldn't get ruined with sand. I make sure to walk really slow and we sat super far back.
Mom and I stayed for a long time so I got halfway through the final book in the Seasons of Grace Series by Beverly Lewis. Once I finished book one I needed to know how the story ended. I hate leaving off on a cliff-hanger.
After having a carb overload at the beach I was craving something healthy for dinner. So Troy and I ate a quick meal at Panera. Of course I got my favorite salad.
He got his usual mac & cheese. But I really just go there for those delicious crunchy chips ;)
Sunday ended up being another gorgeous day so I knew right away I wanted to spend it outside. In the morning I sipped my coffee down at the water. It's very nice to start off the morning with a little downtime instead of worrying about a to-do list.

I Swear I'm Not A Beauty Product Junkie


We're off to another Marvelous Monday, especially since most of you are probably in bed enjoying the day off today.

It is just starting to feel like Memorial Day weekend around here. The past couple of days had pouring rain and was freezing. Forty degrees in May is just crazy!

Luckily, the sun started shining yesterday :)

WIAW-I Forgot What A Vegetable Looked Like


Woah, I can't believe it's already time for another round of What I Ate Wednesday Tuesday.

Sorry for leaving you all hanging yesterday. After getting home at 1am on Monday night and debating whether to get up for school by 6am, I decided to skip class. Sleeping in felt marvelous after traveling this past weekend. Between unpacking and catching up on some homework, life left me little time for blogging yesterday.

I am glad to be back, I miss chatting with you guys while I was away :)

Anyway, let's get to the main point : FOOD!

Since I came home and found the fridge in a very sad state, food shopping was on my agenda for last night. Anyone else try to eat up everything before going away? All that was left was pickles, limes, and tomatoes :(

Nothing A Beer And A Coffee Can't Fix

Hey guys! Happy to chat with you all since this weekend was a busy one and I didn't get to pop in and say hi. Mondays always come so fast so let's recap all the marvelous things about this past weekend.

Friday turned out to be quite a stressful day at school. After checking my final math project to find out my group's calculations are off, well that is definitely not how my group planned it. Ooof. Hoping we can get everything squared away soon. Nothing a hot cup of coffee can't solve right or a Panera date with the boyfriend to catch up...

WIAW-Celebrating St. Paddy's Late

Time for another round of What I Ate Wed. But it's really a combination of what I ate Tuesday.

Let's let's get to the goods shall we?

Breakfast started off with my favorite peanut butter overnight oats. Some fresh strawberries cut up on top. Mmmm love starting the day off with fresh fruit!
If I don't have a snack between breakfast and lunch I am literally starving. I can never skip it. When I don't eat I am not a happy person haha! The snack for yesterday ended up being two hard boiled eggs.
Lunch was the main star yesterday. Ever since my egg sandwich craving last weekend, I've had a whole container of turkey bacon to use up. So I've been filling up all my wraps with it. Lettuce, garlic hummus, TJ's grilled chicken, and tons of turkey bacon was delicious!
Ummm so you guys are never going to guess where I went for dinner last night. Here's a clue:
Yep, it was Panera AGAIN! We even had the same cashier and ordered the same food ahah. Kind of embarrassing, but so tasty. I actually got a strength workout in with my mom and by the time we got back home after the gym it was late and no dinner was prepped because I was lazy last night.

And dessert was awesome! You guys may remember me mentioning my friend Kim in the past. She's my go-to girl for gluten free everything. Anyway, her brother baked her gluten free irish soda bread. I know! How sweet is that?! She saved me some slices and now you guys can officially "meet" her.
And they're already gone haha. I can't even remember the last time I had irish soda bread. It was yummmmy.

Dealing With Being A Quitter

Thinking I had no plans on the agenda for yesterday ended up proving me wrong. Monday turned into one busy and quick day.

It was the first day my cold said goodbye (yay) since I was so over being sick.

I managed to get a quick walk in at the park before the snow/rain started falling. Boy oh boy, was it cold yesterday. I bundled up with my thick scarf, but it was still freeeeeezing. Where is spring?

The Green Ball is Dead

Oh man it was so hard getting out of bed yesterday morning. Mix howling wind and pouring rain together, and Ashley just wants to lounge in bed all day.

But, I forced myself to the gym for quad day. Let's put it this way- I survived haha. Quads are probably my least favorite muscle to train and I have zero motivation for it. UGHHH, soon enough shorts weather will be here. <----That can be my motivation.

Since my house gets extremely drafty when the wind gets intense, I was freeeezing. Naturally, lunch ended up being comfort food at its finest. Sweet tomato soup with basil. This stuff is good!
