I'm Back!

Hey strangers. Long time no chat huh?!

I had all intentions of blogging from the Dominican Republic, but after seeing the gorgeous beaches, blogging flew out the window. Don't get me wrong, I love you guys, but it's nice to have a break once in awhile. Blogging is like a full time job! It was nice not being on Twitter or Instagram constantly.

My Snazzy New Ride

And I thought I had hardly any plans yesterday....Monday proved me wrong.

After waking up early to get a hamstring workout in and I mean early!, mom and I headed over to one of the parades. My grandfather was driving a veteran that couldn't walk in his corvette.

We ended up parking far away from the actual parade- about two miles. So we had to jog to make it on time. Nothing like a little unplanned cardio run haha!

I ended up heading over to my family's for a little to visit in the morning. I wasn't planning on being out of the house all day, so I had no food on me. Also, no car/purse emergency snacks. I'm not supposed to be having dairy, but it was pretty much my only option.

We're off to another Marvelous Monday, especially since most of you are probably in bed enjoying the day off today.

It is just starting to feel like Memorial Day weekend around here. The past couple of days had pouring rain and was freezing. Forty degrees in May is just crazy!

Luckily, the sun started shining yesterday :)

Sorry I didn't get to pop in and chat with you all this weekend. It was a busy one!

Friday started off with absolutely gorgeous sunshine and perfectly hot weather (think 75 degrees). Troy and I both had the day off from school/work so we made a spontaneous trip to the beach.

Thoughts On A Thursday

1) Even though I’m super excited about all this warm weather, one thing I will miss is blankets. Nothing beats being lounging around on the couch on a chilly evening layered in blankets. Most nights you can find me parked right on the couch with my phone or a good book.

Friday Favorites

Spending the day at the beach with Wishbone! Sadly, she seems to have hurt her leg the other night. She has been limping and crying so the family is taking her to the vet while I am away. I'm just very worried about her <3333

I'm sure most of you are back to work this morning, but my spring break has just begun. That means lots of wild and crazy adventures this week. Totally kidding haha. I am really the farthest thing from a party animal.This week will most likely consist of writing papers and doing some competition menu planning.

Absolutely gorgeous weather on Saturday. This type of weather makes me just want to read and relax by the water. I'm so lucky to live so close by to the beach. Can't wait for those beach days.

Big Party Animals

So all those plans for the weekend I told you guys about yesterday? They all had to get canceled. Friday morning started with a case of the sniffles. Then, by last night it was a full blown sinus infection. I plan on taking it easy, but hoping to celebrate St. Patrick's Day tomorrow somehow!

When I came home from school yesterday, this guy met me at the door. Somebody needs a haircut and it ain't me. He's starting to look a little shaggy.

Sunshine Saturday

Woohoo 3rd week in a row I am linking up with Katie for Marvelous Mondays! Anything that makes Mondays more fun is cool by me.

It was the one of those weekends where you have no set plans. This can be challenging for me because I'm not really a laid back, go with the flow type of person. I like plans, being organized, and being busy.

Friday night was spent vegging out on the couch. I did manage to whip up an awesome dinner! Some scrambled egg whites, spinach, mozzarella cheese, and tomatoes served right up.

Sushi Date and Caramel Sauce

Long time no talk huh? I had all intentions of coming back and chatting with you guys on Sunday, but the day just flew by. Sometimes it feels like I need 36 hours in a day instead of only 24. To be honest, it was kind of nice shutting the computer down for the day. Technology is something that is very easy for me to get addicted to.

Even though this weekend was a busy one, it was a marvelous one. Thanks to Katie for Marvelous Mondays!

On Saturday I picked up a new cereal at my local health food store. Finding a gluten free cereal thaat is low in sugar, but high in protein proved to be a challenge. We all know I eat my beloved oatmeal cookie almost everyday, but a girl has to change it up every once in awhile. This one by Better Balance is pretty tasty, but at $8 a box, it is def. not something I can afford on a regular basis. That is way too much money for a box of cereal, but it is nice for a treat.
