Well when I first sprained my knee I never would have thought it was something more serious.
When I went to the orthopedic the other day they took more x-rays and looked at the MRI results. I found out I have a fracture in my knee bone and meniscus erosion, but not a tear. How in the world did I ever do this?! I have absolutely no idea!
The nurse explained that this is usually common in long-time runners. Or a person with a leg injury and then it develops into this. It's very strange and random!
The bad news is that it could take anywhere from 6 weeks to 6 months to heal. And I have to wear the huge knee brace at all times along with my crutches. The good news is I can still workout my upper body as long as I put no weight on my injured knee. So at least I can do something, of course with lots of modification. Anything is better than nothing!

America's Got Talent Experience
We hopped on an early train into the city and spotted my friend Kim on there too! Haha. She's in the middle.
To pick up our tickets we had to arrive at Radio City Hall around 3. We didn't have to come back until 7 so this left us plenty of time to eat and explore.
After hailing a cab the boyfriend and I headed to Times Square to venture around M&M world. Of course I was a sucker for all those "exclusive" NYC flavors so I had to buy some. They always know how to draw me in for chocolate haha!
But when we got there I was disappointed that their BBQ sauce is not gluten free. So my idea of eating juicy BBQ ribs quickly diminished. I have to say their salad was ginormous and much better than expected! There were avocado, cucumbers, carrots, tomatoes, and grilled chicken. My favorite part was the bacon. It wasn't just pieces of bacon, but little shunks of it like squares. Tasty!

Homemade Iced Coffee
Well it's Wednesday which I am super stoked about since Troy and I have some fun plans in the city for today! But I guess we should get to the point of this post since it is What I Ate Wednesday and everything :)

Coffee first please! That is what I was thinking yesterday morning when I woke up. Combine a long to-do list, doctor appointments, and cleaning, I need my coffee first!
I think I've finally got the magic secret down to making good tasting iced coffee at home.
Add double parts coffee grinds, regular parts water, and about 10 iced cubes...and you've got quality coffee without the watery taste.
Along with some peanut butter overnight oats, I ate two hard boiled eggs for some extra protein.

Swimming Cardio Workout
Good morning my favorite readers!
The weather has been absolutely gorgeous around these parts for the past couple of days. I couldn't let another sunshine day go to waste so I headed outside for the majority of yesterday.
Pool time it was!
Since my doctor said no exercise at all, I wanted to at least move a little bit. So I came up with this swimming workout for 30 minutes. Obviously I was going alot slower and not putting any weight on my bad knee, but it was still intense. This left me out of breath a few times!
The tricep dips were done against the ladder, but you could also do them against the pool side. Here are some links if you're not familiar with the strokes.
Butterfly Stroke
Side Leaps
After that workout for me I was more than ready for lunch. I quickly packed up a little snack style lunch to enjoy on the deck. Some rice crackers with hummus for dipping, raspberry chobani yogurt, and red grapes. (<---grapes are only $.99 a lb at Stop and Shop this week!)

Garage Sales
Well it was a pretty low key weekend over here thanks to the whole knee situation. But that didn't stop me for getting out of the house!
Not to much to report on Saturday besides the usual food shopping. Troy and I did have delicious takeout though.Swell Taco for us! Everytime we get this place I'm always thinking two tacos is not going to fill me up. And then I am stuffed by the time I am done with them. They may look tiny, but they are stuffed with goodies in there.
We were both up early Sunday morning so we headed to our Farmer's Market. We were both totally disappointed! There was only one produce booth which was crazy expensive. Most of the booths were either pastries I couldn't eat or rice pudding. Ehhh we weren't fans. I guess that's what happens when you live near hardly any farms.

Crutches Are No Fun
Hope you're weekend is off to a great start! Mine is starting to get better after a rough night last night. Doctor appointments and MRI's are not exactly TGIF mood starters haha.
It turns out my knee is not getting better any time soon. Earlier in the week I went back to the gym to train hamstrings. As soon as I got there I could feel I wouldn't be able to workout. It doesn't hurt to walk anymore, but anytime I put weight on it, it started hurting. I figured a sprain would only last a week but turns out it's still not healed.
So Mom and I headed back to the doctors to have them recheck it with x-rays. Everything came back normal so they sent me for an MRI. I didn't really know what to expect since I've never had one before.

How I Make My Oats
A couple of you guys have asked me how I make my overnight oats and I realized I never shared the secret with you ;)
It's really simple and takes me under five minutes to make breakfast every morning or night depending on how lazy I get at night.
So in my oats goes:
If I make them the night before, I just let them chill in a covered bowl overnight and then eat them cold. If I make them in the am, then I do my little freezer trick to help thicken them up a bit.
