WIAW-Surprise Cookies

Ummm I totally didn't realize it was Wednesday already and started writing a different post. Whoops. Haha thought it was Tuesday. Ya, I'm hoping I'm not the only one who gets the days mixed up. This week is flyin' byyyyyyy over here.

Breakfast started off with waffles! Crazzzzzzy. I skipped my usual oatmeal and opted for apple cinnamon. My stomach has been a little off lately so I am all about dry, bready items. Plus, we all know I love my carbs ;)

Some scrambled egg whites made their way in there too, but they weren't feeling photogenic. (totally forgot to snap a pic)


Lunch was a nice big taco salad. Lots of TJ's cut up chicken for protein, avocado chunks, tomatoes, lettuce, and some hummus mixed together. I like my salads a little crunchy so I broke up brown rice crackers into little "croutons". Of course I mixed in a little greek yogurt for dipping. Deeeeelicous if you ask me.
Apparently, I take all my food pictures with this snowman plate haha.

After school, I was really in the mood for a good workout. I couldn't decide if I wanted to run or walk so I did a little bit of both. I'll be posting the workout later on in the week. It was tough! I was pooped out after it. Oh and this happened-my first selfie pic at the gym. Honestly, I don't know how some bloggers do it. I felt like a WIERDO haha. Thankfully, no one walked in while I was snapping a pic of my sweaty self after my workout session.
Since I knew I wouldn't be eating dinner til late and anytime after six o'clock is late for me. What can I say, I'm an early bird? Anyway, after the gym I needed a snack. Usually, I go for the cookie dough flavor, but mint just sounded better this week. Oh my goodness, I am glad I bought this. This flavor reminded me of the girl scout thin mint cookies. It definitely would satisfy my sweet tooth!
Oh boy. Let's get right to the main star of this post: Meatloaf!
I went to visit my family last night for dinner and it was sooo good. I can't even remember the last time I had meatloaf. Green beans and a sweet potato joined the food party too.
Just look at this sweet potato with some butter. OH MY GOODNESS. YUMMY. I think I need to start buying sweet potatoes instead of just brown rice for my carbs.
Meatloaf Recipe: 1lb ground turkey, 1 egg, onion flakes, parsley/basil/garlic/, 1/2 c gf bread crumbs, 1/4 c liquid mix of ketchup/hot sauce/water, 1 c chopped mushrooms.

 Now, I was already stuffed from this dinner and then these cookies were brought out for dessert.
When your grandma bakes you gluten free cookies, you don't pass them up. Well, I'm not one to pass up a cookie at any time ;) The vanilla frosted ones were my favorite! I think I need to reel my sugar intake back in this week. After completing my life's goal on Monday and these bad boys, I think that's enough treats for the week.

Would you ever pass up a cookie?!

  2. It is extremely hard for me to pass up a cookie...especially one made by my grandma! I can't take self pictures either. I feel so weird. Isn't it great when the weeks fly by!? Love it :)

  3. I wouldn't have refused cookies like that for definite! They look so good. And sweet potatoes are definitely one of my favourite carbs. I could just eat them for dinner plain with nothing else haha.

  6. I can't pass up homemade cookies! just can't do it! That sweet potato with your meatloaf looks amazing!! Hope your stomach starts to feel better soon

  7. ALL of that food looks so good!!! It takes a great amount of self-discipline for me to pass up a good homemade cookie! I really want to try that Luna flavor!

  8. If a cookie like that ever comes your way, never pass it up...I think that's a law ;)

    I LOVE those mint protein bars, I need to go pick up some more, my husband always eats them before I have 1 LOL!
