Obviously I Can't Read Recipes

Hey all! Cheers to the weekend.

Friday snuck up on me this week, but I'll take it.

Last night's dinner was thrown together in less than 10 minutes, but was oh so good. I prepped some turkey meatballs on Sunday, added some brown rice, and a sweet potato. Done.
Since I've been very conscious on my sugar intake level, I didn't want to use a jar of pasta sauce since they contain alot of hidden sugar. I clearly don't make my own sauce. In the words of Sweet Brown:
So I grabbed a jar of diced tomatoes and added a TON of garlic. It did the trick. When in doubt, just add more garlic. Sorry for anyone I encounted later on in the day. I'm sure they were not loving my garlic breath.
Before dinner I made some of Kierston's cinnamon no carb muffin tops. I kept the recipe pretty much the same except for one ingredient. I was out of flax seeds so I subbed in some oatmeal instead.
They came out good, except I need to learn to read recipes better. I was not supposed to bake them in cupcake holders.
So I had alot of trouble getting them out haha. Major fail.
When I got home from the gym, I was greeted with a nice surprise. More and more I am becoming an afternoon/nighttime coffee drinker. I get decaf so it doesn't mess with my sleep. Still, I never thought I would be a coffee person.
In other news, it is exactly one week until my Colorado trip! I am beyond excited. This is my first time traveling West, so if anyone has any recommendations please send them my way. I am only there for a long weekend, but you can bet I am going to jam as many things as I can into it.
(can't wait to SWIM!)

Also, this is my first time traveling on a plane being gluten free. I've been gluten free for three years and I guess I don't go on vacation that much haha. Must start once I graduate college in May!

But I need your help. I asked my friend Kim how she travels gluten free because we both love healthy food. She advised me no yogurt since they almost took that away from her at the airport. I plan on packing tuna packets, protein bars, oatmeal in ziplocs, a jar of peanut butter (hey can never have too much) and that's as far as I got.

*Questions-
What do you bring for healthy snacks while traveling that can be in a suitcase?
Do you like swimming in pools or hot tubs?

P.S. Thanks to all the brave ones who voiced their opinion on yesterday's post. I took a chance by writing about that subject since it can be a sore one for some people. Interesting enough, it was one of my top viewed posts. For the record, I am for the legalization for many personal reasons, but that's all I am going to say about that.

    The only thing I can think of are GF bars or anything dried. Dried fruit and nuts?

  2. I like your version of pasta sauce! I almost always stop into a grocery store or small market when I get to where I am going and get a few healthy snacks to keep on hand in my hotel room. I would say granola, peanut butter, oatmeal and dried fruit are safe travel foods.

  3. Colorado is so great. I am sure that you will love it!

    My favorite healthy snacks to pack in my suitcase are individual packages of cashews and almonds, Larabars (or other healthy protein bars), and fresh fruit like apples and bananas!

  4. You cook like me! Can't follow a recipe for the life of me! I bring healthy snacks...but normally end up eating seafood appetizers. I love them. And I am a river/ocean swimmer. There is nothing more relaxing than feeling the currents around my body. Yay summer!

  5. Protein bars are a great idea! I also love to bring fruit, small nut packets and baked goodies :) If you're really needing yogurt for the plane, most airports sell Greek yogurt now! Have a fun trip!

  7. I love trail mix, dried fruit, fresh fruit (something harder like apples), nuts, beef or turkey jerky, think they'll let you take peanut butter packets?

  8. Mmmmm tuna packets sound perfect! Tuna is one of my favorite foods ever. And I usually love to pack bags of nut mixes, granola, etc. Sometimes I like to make my own bars and healthy treats so that I can share them with others as well. :)
