WIAW-I Forgot What A Vegetable Looked Like


Woah, I can't believe it's already time for another round of What I Ate Wednesday Tuesday.

Sorry for leaving you all hanging yesterday. After getting home at 1am on Monday night and debating whether to get up for school by 6am, I decided to skip class. Sleeping in felt marvelous after traveling this past weekend. Between unpacking and catching up on some homework, life left me little time for blogging yesterday.

I am glad to be back, I miss chatting with you guys while I was away :)

Anyway, let's get to the main point : FOOD!

Since I came home and found the fridge in a very sad state, food shopping was on my agenda for last night. Anyone else try to eat up everything before going away? All that was left was pickles, limes, and tomatoes :(


Before I started unpacking, I was able to scrounge together some oatmeal with berries that were hiding in the freezer.
A little while later, lunch was courtesy of my mom. She got me Panera on Monday night since she knew I don't usually eat on flights. I ate about half when I got home before bed and saved the rest for lunch yesterday. The chicken cobb salad tasted so good after a weekend full of carbs!

One good stand by when you have no food-eggs for dinner. I mixed some egg whites with frozen spinach and tomatoes. Oh my goodness, it was just what I needed.
The spinach was delicious, which is something I usually never say hah. I think I forgot what a vegetable looked like last week.
My after dinner meal was a cookie dough Quest bar. Which is the best flavor in case you're wondering. I microwaved it for 15 seconds to make it soft and gooey. YUM!
It felt good to getting back to eating on a schedule instead of just eating at random times the past couple days. I'm off to take care of a couple things and get a workout in for the first time in awhile!

  1. Gotta love empty fridge days. It gets the creative meal juices flowing! I've never microwaved a protein bar before to make it gooey. Learned something new!

  3. Eggwhites with veggies are seriously one of my favorite things to eat...for breakfast, lunch, OR dinner!! Yum :).

  4. I'm glad your home from CO safe! Considering you had been out of town and had a mostly empty fridge it looks like you did a great job putting together healthy meals! I always have oatmeal and nut butter in the house so that would probably be my go to if I were low on other foods, but it's one of my go tos even when the house is fully stocked.

  7. I always eat down food before I leave for vaca...and it results in some odd combos...have fun refilling your fridger...and happy wiaw!

  8. I do the same thing when I go on vaca. I do love the after vaca shopping trip though! I still need to get my hands on some quest bars...that cookie dough one sounds awesome!
